Liefmans Cuvée Brut with Vitaporc and Lutosa Purée Gourmande
Ingredients:
- 1 porc rib Vitaproject
- ISPC chicken stock
- 100 gr butter
- 4dl ISPC veal stock
- 5 cl apple vinegar
- pepper & salt
- basilicumcress
- Pearls apple ginger
- Liefmans Cuvée brut with Vitaporc and 100 gr of Rosema
- Truffel pearls
- 200 gr of Lutosa Purée Gourmande
Bereiding
Season the Porc rib with pepper and salt, color in a pre heated oven of 180 c en cook for Min lower the temperature to 120 °c and cook another 20 min. Stop the heat and keep the porc in the oven. Mix the vealstock, with apple vinegar and boil add some bitter, decorate with Basilicum cress, the sauce and the pearls. Add some Purée Gourmande.
